This One Pot Chilli and Rice is the perfect Campervan and Camping Recipe! It’s quick n easy and tastes ggggggreat 😀

1 tbsp oil
1 onion, finely chopped
250g mince beef
1 large mushroom, chopped
2 garlic cloves, finely chopped
1 red chilli, finely chopped
2 tbsp balsamic vinegar
1 pouch microwaveable rice
4 spring onions, chopped
Heat a saucepan and add in the oil to heat through.
Fry the onion till softened, then add the beef mince and fry together for a few minutes.
Next add the mushroom if you’re using it and the garlic, chilli, passata, red kidney beans and the balsamic vinegar.
Simmer together for a minimum for 6 minutes, but ideally around 25 minutes with the lid on for maximum taste.
Squish the pouch of microwaveable rice before opening, then when the chilli is just how you like it, sprinkle the rice over the top of the chilli.
Pop the lid, turn the heat down and let it simmer gently until the rice is heated right through.
Sprinkle with the spring onions and devour with gusto!
